Steve Zaremba and Edward Firestine have brought slow-smoked, home-style barbecue to St. Clair Shores with Little Z's bbq.
The two men, who are St. Clair Shores natives and have nearly 40 years of restaurant experience between them, celebrated the grand opening Thursday of their restaurant on Mack, south of Englehardt.
"There is Slows Bar B Q (in Detroit) and nothing out here," said Zaremba, of his unique menu offered at Little Z's.
Smoked pork ribs, beef brisket and smoked salmon are among the traditional barbecue items Zaremba and Firestine offer. The pork and brisket are slow smoked for up to 14 hours.
The chefs also offer a twist on barbecue with:
- Hog fries: house cut fries topped with items including chili, grilled onions and pulled pork.
- Hog wings: smoked pork shank tossed in one of nine sauces: sweet, bold, cherry apple, honey garlic, spicy buffalo, krazy Asian, Alabama white, honey mustard and Firestine is burning (which are also available on other items).
- Barbeque nachos: tortilla chips, served with onions, tomatoes, jalapenos, Monterrey jack cheese and can be served vegeterian style, or with chicken or pulled pork.
"We are stretching the imagination of barbecue," Firestine said. "We are taking barbecue to a more unique place."
The owners celebrated their grand-opening this week with St. Clair Shores officials as well as officials.
